Coconut Macaroons

Ingredients

  • Eggs (2)

  • Grated coconut (125 grams)

  • Honey or pureed dates (2 tablespoons)

  • Optional: Dark chocolate (at least 70% cocoa, 50 grams)

Coconut macaroons have always been our favourite biscuits. We love coconut anyway and love cooking with it. But we must honestly say that these, ridiculously simple, coconut macaroons are the hero so far for us. It's so simple, but so delicious. You only need 4 ingredients!

Equipment

  • Mixing bowl

  • Whisk

  • Large baking tray + baking paper

  • Cooking/steaming pan optional

  • Spoon/spoon bag optional

Instructions

  1. Preheat the oven to 160 degrees.

  2. Beat the eggs lightly with the whisk in the mixing bowl. Add the honey, stir through and add the coconut. Make this into a firm mass.

  3. Scoop out a little at a time from the mixture, gently press it together in your hand and place mounds on the baking tray. Then make macaroons about 2 cm high and round them.

  4. Bake them in the middle of the oven. Set the timer to 15 minutes and see how they look. Then let them continue to bake for a few minutes each time and keep an eye on them. Then leave to cool.

  5. Meanwhile, melt the chocolate au bain marie and then top the macaroons with the melted chocolate. You can do this using a spoon or a piping bag.

  6. Then put them in the fridge for a while to allow the chocolate to harden and enjoy.
